GRILLED FISH IN BANANA LEAF
Serves 1
Ingredients
200g fresh fish fillet, cubed (preferably snapper or sea bass, but any other fresh fish will do)
2 dried wood-ear mushrooms, available in Asian supermarkets
5g of each: fresh ginger, lemongrass, garlic, red chili, turmeric, minced
10ml turmeric oil.
To taste: salt, pepper, fish sauce, soy sauce, oyster sauce
2 Banana leaves ( or two 25cm squares of foil).
Procedure
Put all above ingredients into a mixing bowl and mix them gently.
Wrap the mixture in green banana leaf (two layers to prevent the mixture from burning).
Marinate in the fridge for at least 20 minutes.
Grill on gridle or charcoal BBQ for about 4 minutes each side.
This dish is commonly served with steamed rice.
*To make your own infused turmeric oil, lightly crush a 5cm piece of fresh turmeric and place in a 100ml bottle of light cooking oil.
This special grilling technique with banana leaf keeps the fish moist but firm, aromatic and incredibly delicious.
